  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the olive oil, onion, and bell pepper until softened (3–4 minutes).
  3. Add spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper; set aside.
  4. In a bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning along with salt and pepper.
  5. Fold in the sautéed vegetables and shredded cheese.
  6. Pour the mixture into a greased 9-inch pie dish and spread evenly.
  7. Bake for 40–45 minutes until golden brown on top and set in the center; cool for 5–10 minutes before slicing.
  8. Serve warm or at room temperature.
