  • 2 celery stalks, finely chopped

  • 500 grams (1 lb) thinly sliced mushrooms
  • 2 teaspoons fresh thyme
  • 1 shredded rotisserie chicken
  • 6 cups broth
  • 1 cup cream
  • 3 cups chopped spinach
  • Pinch of chili flakes
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat oil and sauté the diced onion, celery, and garlic until softened (about 5 minutes).
  2. Add the sliced mushrooms and cook until they're tender (around 5 minutes).
