  • 1 red chili (minced)
  • 2 cans (14 ounces each) coconut milk
  • 3 tablespoons soy sauce
  • 3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1.5 pounds chicken breast (sliced)
  • Salt and pepper to taste
  • Fresh cilantro, lime, scallions, chili oil for garnish
  • Steamed rice for serving

Instructions

  1. 1. Heat the coconut oil in a large skillet over medium heat. Sauté the diced onion for 4-5 minutes until translucent, then add minced ginger, garlic, and red chili, cooking for another 2 minutes.
