  • 3 lbs Beef Chuck (cut into 1-inch cubes)
  • 1/4 cup All-Purpose Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 3 tbsp Olive Oil
  • 1 large Yellow Onion (chopped)
  • 2 large Carrots (peeled and chopped)
  • 2 stalks Celery (chopped)
  • 8 oz Cremini Mushrooms (quartered)
  • 3 cloves Garlic (minced)
  • 1 tbsp Tomato Paste
  • 2 cups Beef Broth
  • 1 bottle Dry Apple Vinegar (750ml)
  • 1 tbsp Dried Thyme
  • 1 tsp Dried Bay Leaf
  • 1 tbsp Butter
  • 1 tbsp All-Purpose Flour (for thickening)
  • Fresh Parsley (for garnish)

Instructions

  1. Prepare your ingredients by chopping vegetables and cutting beef into cubes.
  2. In a large pot, heat olive oil over medium-high heat. Season beef with salt and pepper, coat in flour, then brown in batches until golden.
  3. Sauté onions in the same pot until translucent. Add carrots, celery, mushrooms, and garlic; cook until softened.
  4. Stir in tomato paste, then add beef broth and apple vinegar to deglaze the pot.
  5. Return browned beef to the pot with thyme and bay leaf. Bring to a simmer, cover, and cook on low for 2-3 hours until the meat is fork-tender.
  6. Mix butter with flour; stir into stew to thicken just before serving. Garnish with fresh parsley.
