  • 250g all-purpose flour
  • 30g sugar
  • 10g fresh yeast
  • 3 large eggs
  • 165g unsalted butter
  • 250ml whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 50g sugar (for custard)
  • 20g cornstarch
  • 120g mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast. Add beaten eggs and knead until smooth.
  2. Gradually mix in softened butter until the dough is dense yet slightly sticky.
  3. Cover the dough with plastic wrap and let it rise for about 2 hours at room temperature until doubled in size.
  4. Meanwhile, heat milk with butter and a split vanilla pod. In another bowl, whisk together egg yolks, sugar, cornstarch, and flour. Gradually add hot milk to this mixture while whisking continuously. Return to heat until thickened into custard; cool.
  5. Roll out the dough into a rectangle; spread cooled custard on half and sprinkle with chocolate chips. Fold over, cut into rectangles, and place on a lined baking sheet.
  6. Let them rise again for about 2 hours before brushing with beaten egg and baking at 350°F (180°C) for 10–12 minutes until golden brown.
