  • 1 lb ground beef (80% lean)
  • 1 small onion, diced
  • ½ cup bell pepper, diced
  • 3 cloves garlic, diced
  • 1 packet chili seasoning mix
  • 2 cups macaroni (uncooked)
  • ½ cup heavy cream
  • 1 cup milk
  • 1½ cups cheddar cheese, shredded
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef. Add diced onion and bell pepper; sauté until softened.
  2. Stir in garlic, chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Simmer for 15 minutes.
  3. In another saucepan, melt butter over medium heat and whisk in flour to create a roux. Gradually add heavy cream and milk until smooth; stir in mustard powder, onion powder, salt, pepper, and hot sauce.
  4. Combine cooked macaroni with cheese sauce until coated; fold in cheddar cheese until melted.
  5. Transfer to a baking dish and top with additional cheddar if desired. Bake at 350°F for 20-25 minutes until bubbly.
