  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • 1 tablespoon chili sauce (like Sriracha or Gochujang)
  • 1/2 teaspoon chili powder
  • 1/4 cup plain Greek yogurt (or vegan alternative)
  • Juice of 1/2 lime
  • 2 tablespoons water (or more, to desired consistency)

Instructions

  1. Preheat oven to 425°F (220°C). Chop cauliflower into florets, toss with olive oil and spices, then roast for 25-30 minutes until golden.
  2. In a bowl, mix rinsed chickpeas with red onion, cilantro, lime juice, olive oil, chili sauce, and spices.
