  • 10 slices turkey bacon, diced
  • 3 cups shredded chicken
  • 1 oz package dried ranch dressing seasoning
  • 3 Tbsp unsalted butter
  • 4 cloves garlic, minced
  • 3 Tbsp all-purpose flour
  • 2 cups heavy cream
  • 2 cups half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • Salt and pepper to taste
  • 1 lb dry large elbow pasta

Instructions

  1. Cook the pasta until al dente (one minute shy of package instructions). Drain and toss with olive oil.
  2. Preheat your oven to 375°F (190°C) and butter a 3-quart baking dish.
  3. In a skillet over medium-low heat, cook the turkey bacon until crispy. Remove with a slotted spoon.
  4. Increase heat and add shredded chicken and ranch seasoning; stir for about 2-3 minutes.
  5. In the same skillet, melt butter over medium heat, add garlic, then whisk in flour to create a roux. Gradually add heavy cream and half-and-half while whisking until thickened (about 3-5 minutes).
  6. Stir in Parmesan cheese along with half of both mozzarella and cheddar cheeses until melted; gently fold in pasta, chicken mixture, and half of the turkey bacon.
  7. Transfer to the baking dish, top with remaining cheeses and bacon bits. Bake for about 25-30 minutes or until golden brown.
