  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper; cook until golden brown, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant (30 seconds). Stir in diced tomatoes, chicken broth, and heavy cream; bring to a simmer.
  4. Add cooked pasta and chicken back into the skillet; toss to combine.
  5. Stir in mozzarella cheese until melted and creamy.
  6. Serve garnished with fresh basil.
