  • 2 teaspoons pumpkin spice blend
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, browned and cooled
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin, blotted
  • 2 teaspoons vanilla extract

Instructions

  1. Make brown butter by melting it in a saucepan until golden brown bits form. Cool.
  2. Blot canned pumpkin with paper towels to remove excess moisture.
  3. In one bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In another bowl, combine cooled brown butter, brown sugar, and maple syrup until smooth.
  5. Mix in egg yolk and prepared pumpkin along with vanilla extract.
  6. Fold dry ingredients into wet until just combined. Chill dough for at least 8 hours.
  7. Preheat oven to 350°F (177°C) and prepare cookie sheets with parchment paper.
  8. Roll chilled dough into balls, coat in spiced sugar mix, and place on sheets.
  9. Bake for 12-14 minutes until golden around the edges but soft in the center.
