  • 1 lb ground turkey or chicken sausage (removed from casings)
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 28 oz Crushed Tomatoes
  • 15 oz Tomato Sauce
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Oregano
  • 1/2 tsp Dried Basil
  • 1/4 tsp Red Pepper Flakes (optional)
  • 1 tsp Salt (or to taste)
  • 1/2 tsp Black Pepper (or to taste)
  • 1 lb Mostaccioli Pasta
  • 2 cups Mozzarella Cheese (shredded)
  • 1/2 cup Parmesan Cheese (grated)
  • 2 tbsp Fresh Parsley (chopped, for garnish)

Instructions

  1. In a large skillet over medium heat, brown the ground turkey or chicken sausage while breaking it apart. Drain excess grease.
  2. Sauté chopped onion and minced garlic until the onion is translucent.
  3. Stir in crushed tomatoes, tomato sauce, and tomato paste along with oregano, basil, salt, black pepper, and red pepper flakes. Let simmer for 10 minutes.
  4. Cook mostaccioli according to package instructions until al dente; drain well.
  5. Combine cooked pasta with the sauce until evenly coated.
  6. Layer half of the pasta mixture in a greased baking dish, add one cup of mozzarella cheese on top, then layer remaining pasta and sprinkle with the rest of the mozzarella and Parmesan cheese.
  7. Cover with foil and bake in a preheated oven at 350°F for 30 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.
