  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup all-purpose flour
  • ½ cup Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. Brown the butter in a medium saucepan over medium heat until golden brown. Stir constantly. Transfer to a bowl, mix in espresso powder, and chill until firm (1-2 hours).
  2. In a stand mixer, beat the cooled brown butter with both sugars until light and fluffy (3-4 minutes).
  3. Add egg and vanilla; mix until combined.
  4. Gradually mix in baking powder, baking soda, salt, and flour on low speed until just combined.
  5. Fold in toffee bits.
  6. Scoop dough into balls and refrigerate for at least 2 hours (or up to 24 hours).
  7. Preheat oven to 350°F (175°C). Place dough balls on parchment-lined baking sheets, sprinkle with flaked sea salt, and bake for 11-13 minutes until edges are golden but centers remain soft.
  8. Cool slightly on the baking sheet before transferring to wire racks.
