  • ¾ cup peach preserves
  • ¼ cup apple juice
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches (pitted, thinly sliced)

Instructions

  1. In a bowl, mix peach preserves, apple juice, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes. Reserve half for later.
  2. Marinate salmon fillets in half of the marinade for at least 30 minutes.
  3. Preheat oven to 375°F.
  4. Sear marinated salmon skin-side up in an oven-safe skillet for 2-3 minutes until golden.
  5. Flip the fillets skin-side down and add sliced peaches around them.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F.
  8. Serve garnished with parsley.
