  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches (thinly sliced)
  • Fresh parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes to create the marinade. Reserve half.
  2. Marinate salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat oven to 375°F.
  4. Sear marinated salmon skin-side up in an oven-safe skillet over medium-high heat for 2-3 minutes until golden brown. Flip and add sliced peaches.
  5. Pour reserved marinade over salmon and peaches, then roast in the oven for 12-15 minutes until salmon reaches an internal temperature of 145°F.
  6. Serve immediately with chopped parsley for garnish.
