  • 2 1/2 cups peeled and sliced peaches (about 56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour (divided)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar (for topping)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, and sugars along with flour. Gently toss until well-coated.
  3. In another bowl, mix together the remaining flour, oats, brown sugar, granulated sugar for topping, salt, and cinnamon. Add cold diced butter and mix until crumbly.
  4. Layer the fruit mixture in a baking dish and top with the crumble mixture evenly.
