Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (or more to taste)
  • 2 tablespoons honey
  • 1 cup buttermilk
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • â…› teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Instructions

  1. Prepare the bang bang sauce by whisking together mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl. Set aside.
  2. In another bowl, combine buttermilk and Sriracha. Soak chicken tenderloins in this mixture for at least 10 minutes.
  3. Set up three shallow dishes: one with seasoned flour (flour, garlic powder, salt, black pepper), one with beaten egg, and one with panko breadcrumbs. Coat each tenderloin in flour, dip in egg, and roll in panko.
  4. Heat canola oil in a frying pan over medium heat. Fry the breaded tenderloins for about 3 minutes on each side until golden brown.
  5. Remove from oil and drain on paper towels. Drizzle with the bang bang sauce and garnish with chopped parsley before serving.
