  • 1 large broccoli head (cut into florets)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 large eggs (lightly beaten)
  • 2 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Blanch broccoli in boiling water for about 2 minutes until bright green.
  2. In a bowl, mix blanched broccoli with cheddar, mozzarella, parmesan, breadcrumbs, eggs, flour, garlic powder, onion powder, salt, and pepper until well combined.
  3. Roll mixture into 1-inch balls and place on a lined baking sheet.
  4. Bake for 20 minutes or until golden brown.
