3–4 lbs organic chicken (skin removed)
2–3 Tbsps Jamaican Green Seasoning
2 Tbsps Jamaican curry powder
1 can (14 oz) full-fat coconut milk
2 medium russet potatoes (peeled and cubed)
2 medium carrots (chopped)
3 garlic cloves (minced)
1–3 scotch bonnet peppers (to taste)
1 cup organic chicken stock
Instructions
Marinate the chicken with Jamaican Green Seasoning, curry powder, sea salt, and smoked paprika. Let sit for at least 30 minutes.
Heat olive oil in a large pot over medium heat. Sauté garlic and ginger until fragrant.
Add marinated chicken to the pot and brown on all sides.
Stir in coconut milk and chicken stock along with potatoes, carrots, scotch bonnet peppers, thyme, and Jamaican pepper sauce.
Bring to a gentle simmer, cover, and cook for about 30 minutes until the chicken is tender.
Taste and adjust seasoning if needed before serving.
