  • 1 medium red bell pepper
  • 1 jalapeño (optional)

  • 1 15 oz can black beans
  • 1 15 oz can corn
  • 1 tbsp fresh lime juice
  • 1/4 cup chopped cilantro
  • 6 corn tortillas
  • 1/4 tsp salt

  • sour cream or Greek yogurt
  • shredded cheddar cheese
  • lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent.
  2. Add minced garlic, red bell pepper, and jalapeño; cook for an additional few minutes.
  3. Stir in chicken pieces and sear until golden.
  4. Sprinkle chili powder, cumin, smoked paprika, and cayenne pepper; mix well.
