  • 2 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 large onion
  • 2 bell peppers (red and yellow)
  • 3 cloves garlic
  • 1 jalapeño (optional)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 6 cups chicken broth
  • 1 can diced tomatoes (28 oz)
  • 1 can black beans (15 oz)
  • 1 can corn (15 oz)
  • Juice of 1 lime
  • 6 corn tortillas (cut into strips)
  • 1 avocado
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/4 cup shredded cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent.
  2. Add chicken thighs along with garlic, bell peppers, and jalapeño; cook until chicken is browned.
  3. Stir in chili powder, cumin, and pour in chicken broth with diced tomatoes. Bring to a boil then reduce to simmer.
  4. After ten minutes, mix in black beans and corn; let simmer for another fifteen minutes.
  5. Fry tortilla strips in olive oil until golden brown.
  6. Stir in lime juice before serving. Ladle into bowls and top with avocado, sour cream, cilantro, cheese, and crispy tortilla strips.
