  • 2 cups dried chickpeas (soaked overnight)
  • 6 cups water (for cooking chickpeas)
  • 1 tsp salt (for cooking chickpeas)
  • 2 tbsp vegetable oil
  • 1 large onion (finely chopped)
  • 2 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala
  • 1 tsp amchur powder (dry mango powder)
  • 1 can (14 oz) crushed tomatoes
  • 1 cup water (or as needed)
  • 1 tbsp chopped cilantro (for garnish)
  • to taste salt (adjust to taste)

Instructions

  1. Cook the soaked chickpeas in a pot with 6 cups of water and 1 tsp salt until tender (about 45-60 minutes).
  2. In another pot, heat vegetable oil over medium heat and sauté chopped onions until golden brown. Add ginger-garlic paste and cook for another minute.
  3. Stir in turmeric, red chili powder, coriander powder, and cumin powder, cooking until fragrant.
  4. Add crushed tomatoes and water; simmer for about 10 minutes to blend the flavors.
  5. Drain the cooked chickpeas and add them to the tomato mixture along with garam masala and amchur powder. Mix gently.
  6. Adjust salt as needed, simmer briefly, then garnish with cilantro before serving.
