  • 50 g active sourdough starter (100% hydration, recently fed)
  • 450 g bread flour (divided)
  • 350 g lukewarm water (divided)
  • 100 g levain (prepared ahead)
  • 10 g salt

Instructions

  1. Prepare the starter by mixing the active sourdough starter, 50g of flour, and 50g of lukewarm water in a jar. Cover and ferment for 8-12 hours until doubled in size.
  2. In a large bowl, combine 400g of flour with 300g of lukewarm water. Rest for 30 minutes for autolyse.
  3. Add the prepared levain and salt to the dough mixture, mixing thoroughly.
  4. Cover and let rest for another 30 minutes; then perform stretch and folds every 30-45 minutes for 3-5 hours.
  5. Shape the dough into a loaf and place it in a floured banneton basket. Refrigerate covered for 12-18 hours.
  6. Preheat your oven to 450°F (232°C) with a Dutch oven inside.
  7. Carefully transfer the loaf into the hot Dutch oven, score the top, cover, and bake for 20 minutes.
  8. Remove the lid and continue baking uncovered for another 30-35 minutes until golden brown.
  9. Cool completely on a wire rack before slicing.
