  • 1/3 cup quick cooking oats
  • 1/3 cup light brown sugar
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 Tablespoons unsalted butter – melted
  • 2 medium apples (Granny Smith, Gala…) – peeled and diced into 1/2 pieces
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter – room temperature
  • 2/3 cup sugar
  • 2 eggs – room temperature
  • 1 ½ teaspoon vanilla extract
  • ½ cup milk
  • 8 oz. brick-style cream cheese – room temperature
  • 1/3 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1 egg
  • ¾ cup powdered sugar
  • 2 Tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and line it with parchment paper.
  2. In a bowl, mix flour, oats, light brown sugar, cinnamon, nutmeg, and melted butter for the topping until crumbly.
  3. Combine diced apples with granulated sugar and cinnamon in another bowl.
  4. For the bread batter, whisk together flour, baking powder, and salt in one bowl; in another bowl, beat butter and sugar until fluffy. Add eggs one at a time followed by vanilla extract and milk. Gradually mix in dry ingredients.
  5. Blend cream cheese until smooth; add granulated sugar, flour, vanilla extract, egg, powdered sugar, milk—mix until creamy.
  6. Pour half of the bread batter into the pan. Layer with half of the apple filling and half of the cream cheese filling. Repeat layers.
  7. Sprinkle topping over everything and bake for about 60 minutes or until golden brown.
