  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by greasing it and lining it with parchment paper.
  2. In a large sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Measure out ¾ cup after boiling.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually whisk in the boiled cider until well combined.
  5. Gently fold in the flour until just mixed—avoid overmixing.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown.
  7. Cool slightly before topping with melted butter and a mixture of sugar and cinnamon.
