  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a large pan, bring the apple cider to a boil and reduce by half, about 5 minutes.
  3. In a medium bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well combined.
  4. Stir in the reduced cider into the mixture until combined. Gently fold in flour until just mixed.
  5. Pour batter into the prepared dish and bake for 22-25 minutes until golden brown. Check doneness with a toothpick.
  6. Cool slightly; place room temperature butter on top to melt before sprinkling with a sugar-cinnamon mix.
