  • 1 tbsp southwest seasoning

  • 8 cups mixed greens
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup corn kernels (fresh, frozen (thawed), or canned (drained))
  • 1 red bell pepper (diced)
  • 1/2 cup red onion (thinly sliced)
  • 1 avocado (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey
  • 1 tbsp chopped cilantro
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the air fryer to 400°F (200°C). In a bowl, mix cubed chicken with olive oil, southwest seasoning, garlic powder, salt, and black pepper. Let sit for 10 minutes.
  2. Place seasoned chicken in the air fryer basket in a single layer and cook for 12-15 minutes until golden brown.
  3. In a large bowl, layer mixed greens with black beans, corn, diced red bell pepper, sliced red onion, and diced avocado.
  4. Whisk together dressing ingredients: olive oil, lime juice, honey, cilantro, salt, and pepper.
